Daje (pronounced DAH-yeh) is a traditional Roman expression and Roman slang that captures the energy, passion, and warmth of Rome.
Often translated as “come on,” “let’s go,” or “you got this,” Daje represents encouragement, excitement, and the joy of sharing moments together.
At Daje Pinsa, our name reflects our mission: bringing the authentic spirit of Rome to Orlando through traditional Roman pinsa, Italian hospitality, and unforgettable experiences around the table.

Born and raised near Bergamo, Italy, food has always been more than a profession, it has been my greatest passion.
I started making pizza at just 13 years old, competing twice in the Italian Pizza Championship before building a career leading renowned Italian restaurants across Europe and Asia. Later, I spent more than 15 years with Patina Group at Walt Disney World®, including Via Napoli Ristorante e Pizzeria, where I had the privilege of sharing authentic Italian cuisine with millions of guests from around the world.
Today, Daje Pinsa is the realization of that lifelong dream: bringing authentic Roman pinsa, traditional Italian craftsmanship, and genuine Italian hospitality to Orlando. Every pinsa we serve reflects the traditions, quality, and passion that have guided my entire career.
